A middle ground between lamb and the powerful flavour of mutton, and often regarded by those in the know as the best tasting of them all, hogget is a sheep between one and two years old. The longer grazing time given to the animal ensures that its meat develops greater interest and depths of flavour.
Join us at The Beacon restaurant, where a glass of fizz will be provided upon arrival, before the chance to enjoy some expertly prepared hogget from at least two different animals, kindly provided by Pasture for Life certified farmers. Fidelity Weston, a Director of Pasture for Life and Kent farmer, will speak about the benefits of feeding animals only on pasture and we will discuss the nuances in taste between the different 100% pasture-fed animals. We will be joined by another CLA member and local producer, Biddenden Wines, who will conduct a wine tasting and discuss pairing the wine with the hogget. Following the meal, guests will have the chance to sample some delicious produce from Winterdale Cheesemakers, another local producer.
